Maybe Hunter's hair is that of an especially long-maned alpha wolf, whereas when Amity has a bad hair day her hair looks like a lion's mane, since Amity is the cat and Hunter is the dog.

Luz actually made the right choice imo, like in all the stories like Alice in Wonderland, who wouldn't want to stay in the fantastical, magical place, and instead return to a normal life. And Luz doesn't have to choose between the two, she could travel between both, so of course she'd keep going to the Boiling Isles.
